So Much Cilantro

Left in excess of a giant bunch of cilantro, I went surfing on the web for an exciting new recipe. The beautiful and brilliant 101 Cookbooks has a search by ingredient menu, making my quest easy and brief. Under “cilantro”, I found the Cilantro Noodle Bowl Recipe, an intriguing mix of soba noodles, romanesco broccoli, and tofu. As a preface to the recipe, she talks about how often she only needs a little bit of cilantro and the rest is forgotten, and she is determined to use all of her current batch with this recipe. A girl after my own heart.

I was expecting the Cilantro Noodle Bowl to be more Asian, but it was more like a cilantro pesto with olive oil, garlic, lemon zest and crushed hot pepper. I might have had too much garlic, and I put the lemon zest in the dressing, not on the noodles, so maybe it’s me. Not that I didn’t like it, because I did, very much so. Maybe sesame oil and scallions could make it more Asian, or maybe next time I can use it over regular pasta. Either way it’s a great way to use up so much cilantro.
