Perfect Pickles

There’s no doubt about it, I love pickles. I’ve been wanting to learn how to pickle but somewhat intimidated by the sanitation process. Quick pickles are more of my style. I found the Hot and Sour Pickles to be excessive in both quantities. In trying Dok Suni’s Spicy Cucumber Salad, the flavors are more balanced and complex. A little less chile, a little more sugar, and a smidge of beloved sesame oil, the cucumbers also benefitted from a salt sit ‘n strain. I made them without the sesame salt, and wouldn’t know it was lacking. Not just good on their own, but they also add dimension to rice and sandwiches.

Spicy Cucumber Salad

-slice 1 Kirby cucumber thin, place in colander or strainer
-sprinkle 1T coarse salt on cucumbers, wait 20 minutes
-press out extra liquid with a paper or kitchen towel
-mix 1t crushed red pepper, 1/2T rice vinegar, 1 clove minced garlic, 1/2T sesame oil, and 1/2T brown sugar, toss with cucumbers
