Cold Sesame Noodles

Shamefully, I have not touched the hot and sour cucumbers since I made them. Just a little too hot and a little too sour to enjoy on its own, the cucumbers need to accompany something more rich and starchy. I generally like the crunchy cucumber in cold sesame noodles, the additional spiciness should add extra kick to the stolid noodles. Adapted from Martha Stewart, I already had many of the ingredients – garlic, ginger, scallions, sesame seeds, fancy peanut butter, udon noodles. I would have loved cilantro to add another dimension of fresh flavor, but that died a slow and murky death in the fridge. Instead, I had two great tastes that taste great together.
